Microwave Garden Pea, Quinoa and Pesto

Ingredients
- Green Isle Garden Peas, 300 g
- Quinoa, 1 cup
- Water (to cook the quinoa), 2 cups, more if needed
- Olive oil, 1/4 cup
- Garlic cloves, 4
- Pine nuts, 50 g
- Parmesan cheese, 1 inch
- Fresh basil, 1 handful
- Salt & pepper to taste
Method:
- Add the quinoa to a saucepan over medium heat, followed by boiling water and a pinch of salt. Allow to boil through for 15-20 minutes, or until all of the water has evaporated. Stir frequently to prevent the quinoa from sticking to the bottom of the saucepan.
- Add the garden peas to a bowl, add 2 tbsp of water and then microwave for 5 minutes in a 800W microwave.
- Blitz together the basil, grated Parmesan, pine nuts, garlic cloves (peeled), olive oil and a pinch of salt until they become a smooth consistency.
- Simply assemble all of the ingredients into two bowls and enjoy.
