Air Fryer Topped Croquettes

Another one for the air fryer, Croquettes topped with a Garden Pea, red pepper and spring onion salsa 🥔Made with the finest potatoes and rolled in fine golden breadcrumb coating, take our Croquettes to the next level with Claire Marie’s simple Garden Pea and spring onion salsa. 1 bag Green Isle Potato Croquettes
100g Green Isle Garden Peas
1 red pepper
3 spring onions
2 tablespoons olive oil
1 garlic clove, peeled and finely chopped
Juice of ½ lime
Sea salt and freshly ground black pepper
Jalapenos, sliced


  1. Place the Green Isle Potato Croquettes in the air fryer (time will vary depending on appliances).
  2. Whilst the croquettes cook, place the peas into a pan of boiling, salted water and cook for 3 - 4 minutes then drain.
  3. Chop the red pepper, spring onions and garlic.
  4. To make the salsa, put a pan over a high heat. Once very hot, add the pepper and garlic and 1 tablespoon olive oil along with a pinch of salt and cook for 5 minutes until charred and tender.
  5. Add the spring onions and cook for another 2min. Off the heat, add the lime juice, jalapenos and the peas. Season to taste and set aside
  6. When the croquettes are cooked, pile onto the plate and top with the salsa and serve immediately. Enjoy!
