Garden Peas

Microwave Garden Pea, Quinoa and Pesto

Ryan Mangan (@thefoodanatomist) creates another delicious recipe using our Garden Peas. He states: “Microwaving vegetables is something I swear by – it’s a quick and economical way to cook them and a great way to lock in those fresh and flavourful nutrients. We all love Green Isle’s frozen Garden Peas, so follow my cooking instructions to see how effortless it is to throw the recipe together how I did 😃 👨‍🍳This recipe is packed with protein, and the peas contain a source of folic acid and they’re vegan friendly 🌱 #foodanatomist

Ingredients

  • Green Isle Garden Peas, 300 g
  • Quinoa, 1 cup
  • Water (to cook the quinoa), 2 cups, more if needed
  • Olive oil, 1/4 cup
  • Garlic cloves, 4
  • Pine nuts, 50 g
  • Parmesan cheese, 1 inch
  • Fresh basil, 1 handful
  • Salt & pepper to taste

Method:

  1. Add the quinoa to a saucepan over medium heat, followed by boiling water and a pinch of salt. Allow to boil through for 15-20 minutes, or until all of the water has evaporated. Stir frequently to prevent the quinoa from sticking to the bottom of the saucepan.
  2. Add the garden peas to a bowl, add 2 tbsp of water and then microwave for 5 minutes in a 800W microwave.
  3. Blitz together the basil, grated Parmesan, pine nuts, garlic cloves (peeled), olive oil and a pinch of salt until they become a smooth consistency.
  4. Simply assemble all of the ingredients into two bowls and enjoy.
