One Pot Turmeric, Vegetable & Spinach Rice Pilaf

Green Isle Country Mix Vegetables and Organic Garden Peas make weeknight meals easy like this one pot turmeric rice pilaf recipe, ready in just 40 minutes. Save time on washing as this dish only uses one pot.

25 grams butter
1 teaspoon vegetable oil
1 onion, chopped
1 tablespoon curry paste
½ teaspoon turmeric
20 grams fresh ginger, finely chopped
2 garlic cloves, finely chopped
150 grams basmati rice
300 ml chicken stock
150 grams Green Isle Country Veg
50 grams Green Isle Organic Garden Peas or Garden Peas
Coriander leaves, to serve

Method:  

  1. Heat the butter and oil in a frying pan, then fry the onion for 5-6 mins until softened. Stir in the curry paste, turmeric, ginger, garlic and rice and cook for another minute then pour in the chicken stock. Bring to the boil, lower the heat, then cover the pan with a lid.
