One Pot Turmeric & Vegetable Rice Pilaf

25 grams butter
1 teaspoon vegetable oil
1 onion, chopped
1 tablespoon curry paste
½ teaspoon turmeric
20 grams fresh ginger, finely chopped
2 garlic cloves, finely chopped
150 grams basmati rice
300 ml chicken stock
150 grams Green Isle Country Veg
50 grams Green Isle Garden Peas
Coriander leaves, to serve
Method:
- Heat the butter and oil in a frying pan, then fry the onion for 5-6 mins until softened. Stir in the curry paste, turmeric, ginger, garlic and rice and cook for another minute then pour in the chicken stock. Bring to the boil, lower the heat, then cover the pan with a lid.
- Cook for 10 mins, then stir in the frozen vegetables and cook for 10 mins more until all the stock is absorbed and the rice is tender. Give everything a good stir, season to taste with salt and pepper then serve with some coriander leaves.
