Mixed Berry iced tea with mint

Ingredients
1 x bag Green Isle Mixed Berries
1 tablespoon honey
Juice of 1 lemon
6 black tea bags
1.5 ltrs cold water
¼ teaspoon baking soda
Method:
- Heat berries, honey and lemon in a pan until berries start to break down then remove from heat and blitz with an immersion blender until smooth. Sieve.
- Allow mixture to cool.
- Place 1 litre of water into a large saucepan and bring to the boil. Once the water is boiling, turn off the heat and add the tea bags. Let the tea steep for 15 minutes.
- Remove the tea bags, squeezing out any excess liquid, then add the baking soda.
- Place the remaining 500 ml of cold water in a large pitcher, then add the cooled berry syrup and tea. Stir to combine, then refrigerate until ready to serve. Serve with mint leaves - instead of using ice cubes, use Green Isle Frozen Mixed Berries to keep your beverage cool!
