Mixed Berries

Mixed Berry iced tea with mint

Ingredients

1 x bag Green Isle Mixed Berries

1 tablespoon honey

Juice of 1 lemon

6 black tea bags

1.5 ltrs cold water

¼ teaspoon baking soda

Method:  

  1. Heat berries, honey and lemon in a pan until berries start to break down then remove from heat and blitz with an immersion blender until smooth. Sieve.
  2. Allow mixture to cool.
  3. Place 1 litre of water into a large saucepan and bring to the boil. Once the water is boiling, turn off the heat and add the tea bags. Let the tea steep for 15 minutes.
  4. Remove the tea bags, squeezing out any excess liquid, then add the baking soda.
  5. Place the remaining 500 ml of cold water in a large pitcher, then add the cooled berry syrup and tea. Stir to combine, then refrigerate until ready to serve. Serve with mint leaves - instead of using ice cubes, use Green Isle Frozen Mixed Berries to keep your beverage cool!
