Pancakes with Hot Green Isle Mixed Berries

Here’s everything you need to create a stack of deliciousness. If you prefer this recipe also works great with store bought pancakes if you want to save time.

Ingredients

For the Hot Mixed Berries

150g Green Isle Mixed Berries

1-2 tbsp. brown sugar

1/2 tsp. cinnamon

If making the Buttermilk Pancakes from scratch:

200g plain flour

1 tbsp. sugar

1 tsp. baking powder

1/2 tsp. baking soda

1/4 tsp. salt

300ml buttermilk

1 large egg

50g butter, melted (plus extra for cooking)

To Serve

Greek yogurt

Maple syrup

Fresh mint leaves for garnish (optional)

Method:  

  1. If you would like to make the pancakes from scratch: 1.In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. 2.In a separate bowl, combine the buttermilk, egg, and melted butter. Pour the wet ingredients into the dry ingredients, stirring until just combined (the batter should be slightly lumpy). 3.Heat a non-stick skillet or griddle over medium heat and lightly grease with butter. 4.Pour about 1/4 cup of batter onto the skillet for each pancake, cooking for 2-3 minutes on each side or until golden brown and cooked through. Repeat with the remaining batter.
  2. While the pancakes are cooking, add the Green Isle Mixed Berries to a small saucepan over medium heat.
  3. Sprinkle with brown sugar and cinnamon, stirring occasionally until the berries are warmed through and syrupy, about 3-4 minutes.
  4. Stack the pancakes on a plate, layering or topping them with the warm berries.
  5. Add a dollop of Greek yogurt and drizzle generously with maple syrup.
  6. Garnish with fresh mint leaves, if desired, and serve immediately. Enjoy!
