Garden Pea and mint soup

Our peas are a great source of fibre and folic acid, as well as counting as one of your 5 a day. This comforting soup is sure to warm you up on these cold, winter evenings.

Ingredients
1 large leek, trimmed and sliced
1 medium potato, peeled and diced
1 garlic clove, crushed
850 ml vegetable stock
450 grams Green Isle Garden Peas or Organic Peas
Handful of fresh mint, chopped
large pinch caster sugar
Juice of ½ a lemon
Salt and freshly ground black pepper
Method:
- Put the leek into a large pan with the potato, garlic and stock. Bring to the boil, turn down the heat and simmer for 15 minutes or until the potato is very soft.
- For the garnish, blanch 50 grams of the peas in boiling water for 4 minutes, drain, put in a bowl of cold water and set aside.
- Add the remaining peas to the soup base and simmer for 5 - 6 minutes – no longer, or you will lose the lovely brightness of the peas.
- Stir in the mint, sugar, lemon juice and some seasoning, cool slightly then pour into a food processor or liquidiser and whizz until smooth.
- Serve with the blanched peas sprinkled on top and some extra mint leaves.
