Garden Pea and mint soup

Looking for a healthy, flavourful lunch or dinner options after the festive period? Why not try this simple pea and ,mint recipe at home, ready in just 30 minutes. Our peas are a great source of fibre and folic acid, as well as counting as one of your 5 a day. This comforting soup is sure to warm you up on these cold, winter evenings.

Ingredients

1 large leek, trimmed and sliced

1 medium potato, peeled and diced

1 garlic clove, crushed

850 ml vegetable stock

450 grams Green Isle Garden Peas or Organic Peas

Handful of fresh mint, chopped

large pinch caster sugar

Juice of ½ a lemon

Salt and freshly ground black pepper

Method:  

  1. Put the leek into a large pan with the potato, garlic and stock. Bring to the boil, turn down the heat and simmer for 15 minutes or until the potato is very soft.
  2. For the garnish, blanch 50 grams of the peas in boiling water for 4 minutes, drain, put in a bowl of cold water and set aside.
  3. Add the remaining peas to the soup base and simmer for 5 - 6 minutes – no longer, or you will lose the lovely brightness of the peas.
  4. Stir in the mint, sugar, lemon juice and some seasoning, cool slightly then pour into a food processor or liquidiser and whizz until smooth.
  5. Serve with the blanched peas sprinkled on top and some extra mint leaves.
