Protein Stir Fry with minced turkey

Enjoy Green Isle’s Protein Stir Fry mix with minced turkey for a protein packed, healthy lunch or dinner. Using Green Isle’s Protein Stir Fry Mix saves time on washing, peeling and chopping, making it easier for you to incorporate more veggies in your recipes.

150g turkey mince

2 cloves garlic, grated

1 inch piece of fresh ginger, grated

225g Green Isle Protein Stir Fry

2 tbsp. light soy sauce

1 tbsp. oyster sauce

1 tbsp. sesame oil

Vegetable oil, for frying

2 eggs

Coriander leaves, to garnish

Method:  

  1. Place a wok over a high heat and add 1 tablespoon vegetable oil. Once hot, add the turkey mince and cook, stirring to break up, for 5 minutes, until the mince is browned and nearly cooked through.
  2. Add the garlic and ginger and cook for a minute then add the Green Isle Protein Stir Fry and cook for a further 5 minutes.
  3. Add the soy sauce, oyster sauce and sesame oil and cook for a further 2 minutes to make sure everything is coated in sauce.
  4. To fry the egg, place 100ml vegetable oil into a frying pan and place over a high heat. Once the oil is shimmering, crack the eggs into the pan and fry until cooked to your liking.
  5. Divide the stir fry between 2 plates and top each with a fried egg and some coriander leaves.
