Quick Midweek Curry

Ingredients
3 tablespoons vegetable oil
1 onion, finely chopped
3 garlic cloves, finely chopped
20 grams fresh ginger, finely chopped
2 tablespoons medium curry powder
1 tin chopped tomatoes
200 ml vegetable or chicken stock
2 medium potatoes, peeled and cut into 2cm chunks
200 grams Green Isle Luxury Stir Fry mix
100 grams Green Isle Garden Peas
Method:
- Heat the oil in a large saucepan and add the onion, cooking over a medium heat for 8 minutes until golden. Add the garlic and ginger and cook for a further 2 – 3 minutes until fragrant then sprinkle over the curry powder and cook for 30 seconds more, stirring.
- Add the tomatoes and cook, stirring constantly, until reduced by half – this should take about 10 minutes, though it may take longer. Add the stock and bring to a gentle simmer then add the chopped potato and cook for 10 minutes until cooked through.
- Add the Green Isle Luxury Stir Fry mix and cook for a further 10 minutes.
- Season and serve with rice.
