Quick Midweek Curry

Try our quick midweek curry recipe for a stress-free, healthy mid-week meal the whole family can enjoy using our Luxury Stir Fry Mix. As all the peeling and chopping is done when you use our Stir Fry Mixes, you save time and avoid food waste, using only what you need.


3 tablespoons vegetable oil

1 onion, finely chopped

3 garlic cloves, finely chopped

20 grams fresh ginger, finely chopped

2 tablespoons medium curry powder

1 tin chopped tomatoes

200 ml vegetable or chicken stock

2 medium potatoes, peeled and cut into 2cm chunks

200 grams Green Isle Luxury Stir Fry mix

100 grams Green Isle Garden Peas


  1. Heat the oil in a large saucepan and add the onion, cooking over a medium heat for 8 minutes until golden. Add the garlic and ginger and cook for a further 2 – 3 minutes until fragrant then sprinkle over the curry powder and cook for 30 seconds more, stirring.
  2. Add the tomatoes and cook, stirring constantly, until reduced by half – this should take about 10 minutes, though it may take longer. Add the stock and bring to a gentle simmer then add the chopped potato and cook for 10 minutes until cooked through.
  3. Add the Green Isle Luxury Stir Fry mix and cook for a further 10 minutes.
  4. Season and serve with rice.
