Skinny Chips with whipped feta and caramelised red onions
Enjoy Green Isle Skinny Fries with a whipped feta and caramelised red onion dip, perfect as a side dish for summer BBQs or weekend dinner parties.

Ingredients
1 bag Green Isle Skinny Chips
2 red onions, thinly sliced
2 tbsps. olive oil
2 sprigs thyme
1 tbsp brown sugar
50ml red wine vinegar
150 grams feta cheese
50 grams Greek yoghurt
1 garlic clove, very finely chopped
Handful of flat leaf parsley, finely chopped
Salt
Freshly ground black pepper
Method:
- Pre heat oven to 200C / 180 C fan. Lay chips out on a large baking tray and place into the oven for 20 - 25 minutes, until golden and piping hot throughout.
- Whilst the chips cook, place the red onions and olive oil into a large frying pan and set over a medium heat. Season with salt and black pepper and cook, gently, for about 10 minutes. Once soft, turn the heat up under the onions and cook for a further 5 - 10 minutes until beginning to caramelise. Stir through the brown sugar and vinegar and bubble for a few minutes then set aside.
- For the whipped feta, place the feta and Greek yoghurt into a mini food processor and blend until smooth then place into a bowl. Top with the caramelised onions.
- When the chips are cooked, remove to a bowl and add the finely chopped garlic and parsley. Season with salt and pepper and toss everything together to combine.
- Serve with the feta and onion dip. Enjoy!
