Spicy Cajun Chicken Cauliflower Rice Salad

Ingredients
4 small chicken breasts
1 tablespoon cajun spice seasoning
Olive oil
1 green pepper, diced
1 red pepper, diced
1 white onion, finely diced
1 celery stick, diced
500 grams Green Isle Cauliflower rice
Handful coriander leaves, chopped
2 spring onions, sliced
1 garlic clove
200ml Chicken stock
Method:
- Coat the chicken breasts in Cajun spice and olive oil until thoroughly coated.
- Heat a griddle pan over a medium high heat and add the chicken breasts. Cook for 5 minutes on each side until completely cooked through.
- In a separate pan add 1 tablespoon olive oil and add the chopped peppers, onion, and celery.
- Cook for 10 minutes and then add 1 teaspoon Cajun spice, cook for a further minute then add 200ml chicken stock and boil, reducing by ½. Add the cauliflower rice and cook until defrosted and warmed through then stir through coriander.
- Serve with the griddled chicken breasts.
