Spicy wedges with lettuce wedges, feta dressing and chives
Enjoy our Spicy Wedges with some gem lettuce dressed in a delicious feta, dill and chive sauce. Ready in just 30 minutes, this is perfect for a lunchtime snack or evening treat.

Ingredients
1 bag Green Isle Spicy Wedges
For the lettuce:
200 grams feta cheese
100 ml extra virgin olive oil
75 grams Greek yoghurt
Juice ½ a lemon
1 clove garlic, grated
½ teaspoon onion powder
salt and freshly ground pepper
½ bunch fresh dill, roughly chopped
½ bunch fresh chives, roughly chopped
2 little gem lettuce
Method:
- Preheat the oven to 220 C / 200 C fan.
- Place the spicy wedges onto a baking tray and roast for 15 - 20 minutes until golden and crisp.
- In a blender or food processor, place the feta, oil, yoghurt, lemon juice, garlic, onion powder and a good pinch of salt and pepper. Transfer to a medium bowl and set aside.
- Cut the lettuce into half lengthwise then place a griddle pan over a high heat and cook the lettuce hearts for about 2 minutes on the cut side, until lightly charred but not falling apart. Serve immediately, drizzled with the dressing, the reserved herbs and the spicy wedges.
