Sliced Green Beans with Indian Grilled Chicken and Mash
Healthy family meals can be made easy and nutritious with our Green Sliced Beans, perfect with some Indian grilled chicken and homemade sweet potato and cauliflower mash.

Ingredients
4 chicken breasts
2 tablespoons olive oil
1 tablespoon medium curry powder
1 teaspoon garlic granules
150 grams Green Isle Sliced Beans
1 head cauliflower, core removed & broken into pieces
2 large sweet potatoes, peeled & chopped into 1″ pieces
Knob of butter
To serve
Mango chutney
Coriander leaves
Method:
- Steam cauliflower and sweet potato in about 1-2 inches of water until soft.
- Place the chicken in a shallow bowl and add the oil, curry powder and garlic granules, along with a good pinch of salt and pepper.
- Turn to coat all of the chicken in the spices and oil and set aside. Place a large frying pan over a medium heat and add the chicken breasts, cooking on each side for about 8 – 10 minutes, or until cooked through completely.
- While the chicken is cooking, bring a large pot of water to the boil and add the green beans, cooking for 2 – 3 minutes, until al dente.
- Once the sweet potato and cauliflower are soft, add to a food processor or mash with salt, pepper and butter.
- Once the chicken is cooked, serve with the mash and green beans.
- Add a little mango chutney for sweetness and some coriander leaves and enjoy!
