Honey Glazed Salmon with Cauliflower Rice and Country Mix Vegetables

Ingredients

  • 1 garlic clove, peeled
  • 2 tbsp tableblespoons honey
  • Freshly ground pepper and sea salt
  • 320g Green Isle country mix
  • 2 packs Green Isle Cauliflower rice
  • 4 Donegal catch Salmon fillets

Method:  

  1. Lightly rub the garlic over the salmon fillets
  2. Drizzle the honey over the fish and season with pepper and salt.
  3. If cooking from frozen, Pre-heat oven. Wrap fillets loosely in foil and place on a baking tray. Open foil for last 5 minutes of cooking. 200°C Fan 190°C Gas 6 25-30 mins.
  4. Place the required amount of Green Isle Country Mix into boiling water. Cover, bring back to the boil and simmer for 4-5 minutes.
  5. Cook the Cauliflower Rice according to pack instructions.
  6. Serve all ingredients with a sprinkle of salt and pepper and enjoy!
