An alternative to the cod fillets could include a lovely Chicken Kiev, which works perfectly too.”

Green Isle Skinny Cut Chips
Donegal Catch Fish Fillets
For the sauce:
– Garlic cloves, 2, chopped
– Fresh parsley, 1 tbsp, chopped
– Butter, 2 heaped tbsps
Method:
- Pop the Skinny Fries and Fish Fillets in the Air Fryer -time varies, follow manufacturers guidelines for best results.
- Simply whisk all together, and microwave for a minute before pouring it over the peas. Some fresh juice from a sliced lemon goes very well with the fish fillets too.
