Air Fryer Fish and Chips with Microwaved Garden Peas

Another quick and tasty recipe from Ryan Mangan (The Food Anatomist) – “Looking for even more gorgeous ways to serve up the delicious Green Isle frozen vegetable range? 💡 🧑‍🍳 This Fish, Chips and Garden Peas recipe is a fantastic quick meal for the entire family.As I spoke about in my previous videos of the Microwave Series, microwaving vegetables is a quick, economical and easy way to cook frozen vegetables, as well as being a minimal clean up option!By popping the cod fillets into the air fryer, along with the chips, and microwaving the peas, you even have time to make a gorgeous garlic and parsley butter sauce, with everything prepped and on the plate within minutes. An alternative to the cod fillets could include a lovely Chicken Kiev, which works perfectly too.”

Donegal Catch Fish Fillets

 

For the sauce:

– Garlic cloves, 2, chopped
– Fresh parsley, 1 tbsp, chopped
– Butter, 2 heaped tbsps

Method:  

  1. Pop the Skinny Fries and Fish Fillets in the Air Fryer -time varies, follow manufacturers guidelines for best results.
  2. Simply whisk all together, and microwave for a minute before pouring it over the peas. Some fresh juice from a sliced lemon goes very well with the fish fillets too.
