Berry Crumble Bars
Whether you’re looking for a sweet treat in your kid’s lunchbox or an afternoon pick-me-up when working, these Mixed Berry crumble bars are the perfect treat to make in advance and enjoy. You can use Green Isle Mixed Berries, Blueberries or Raspberries in this recipe and a full batch can be made in just under an hour.

Ingredients
For the base
240 grams plain flour
185 grams butter
Zest of ½ lemon
100 grams caster sugar
Pinch salt
25 grams oats
25 grams chopped hazelnuts
For the filling
375 grams Green Isle Frozen Frozen Mixed Berries / Blueberries / Raspberries
40 grams caster sugar
Zest of ½ lemon plus juice
Zest of ½ orange
3 tablespoons cornflour
Method:
- Preheat the oven to 200 C / 180 C fan and line a 20 cm x 20 cm square tin with parchment paper.
- Place the flour, butter and lemon zest into a large bowl and rub the butter into the flour until the mixture resembles breadcrumbs. Stir through the sugar and a pinch of salt then remove ¼ of the mixture and place it into a small bowl. Bring together the larger amount of mixture to form a dough and then press into the tin, smooth out the top with the back of a spoon. Place into the oven and cook for 20 minutes.
- To the smaller amount of mixture add the oats and chopped hazelnuts, stir and set aside.
- For the filling, mix the frozen berries with the caster sugar, lemon zest and juice, orange zest and cornflour.
- Once the base is cooked, remove from the oven and place the filling on top. Spread out to cover the whole of the base then sprinkle the oat and hazelnut crumb over the top of the berries.
- Cook in the oven for a further 30 minutes until golden then remove and allow to cool before slicing.
