320 grams Green Isle Cauliflower Rice
For the tabbouleh
20 grams parsley, roughly chopped
20 grams coriander, roughly chopped
10 grams dill, roughly chopped
1 x 400 gram tin of chickpeas, drained
100 grams cherry tomatoes, halved
½ cucumber, deseeded and chopped into 1 cm pieces
3 tablespoons extra virgin olive oil
Zest & juice of 1 lemon
Salt and pepper
Method:
- Microwave the Green Isle Cauliflower Rice according to the packet instructions then set aside in a large bowl for 10 – 15 minutes to cool slightly.
- Place the parsley, coriander, dill, chickpeas, tomatoes and cucumber on top of the cauliflower rice and mix to combine.
- Add the olive oil, lemon juice and lemon zest and season to taste with salt and pepper then serve.
