320 grams Green Isle Cauliflower Rice

For the tabbouleh

20 grams parsley, roughly chopped

20 grams coriander, roughly chopped

10 grams dill, roughly chopped

1 x 400 gram tin of chickpeas, drained

100 grams cherry tomatoes, halved

½ cucumber, deseeded and chopped into 1 cm pieces

3 tablespoons extra virgin olive oil

Zest & juice of 1 lemon

Salt and pepper

Method:  

  1. Microwave the Green Isle Cauliflower Rice according to the packet instructions then set aside in a large bowl for 10 – 15 minutes to cool slightly.
  2. Place the parsley, coriander, dill, chickpeas, tomatoes and cucumber on top of the cauliflower rice and mix to combine.
  3. Add the olive oil, lemon juice and lemon zest and season to taste with salt and pepper then serve.
