Christmas Stilton and Thyme Roast Potatoes

Ingredients
1 bag Green Isle Roast Potatoes
75g Stilton or any blue cheese, crumbled
80g butter
1 garlic clove, crushed
Pinch chilli flakes
6 sprigs of thyme, leaves removed and roughly chopped
Small handful flat leaf parsley, roughly chopped
Zest of ½ lemon
Sea salt
Freshly ground black pepper
Method:
- Preheat oven to 200 C / 180 C fan. Place the Green Isle Roast Potatoes on a baking tray and cook for 25 - 30 minutes, until nicely browned.
- Remove from the tray and place in to an ovenproof serving dish. Rumble over the blue cheese and place back into the oven for 10 minutes to melt the cheese.
- Meanwhile, melt the butter in a small saucepan and add the garlic and chilli flakes. Cook for 2 minutes the stir through the thyme leaves, parsley and lemon zest. Season with salt and pepper.
- Remove the potatoes from the oven and spoon over the garlicky, herby butter. Serve to the table, remembering that the dish is hot!!
