Christmas Stilton and Thyme Roast Potatoes

Roast Potatoes are a must at Christmas and with Green Isle’s Roast Potatoes you can save time on meal prep as we have done all the washing and chopping for you. Longer shelf life also means Green Isle is on standby, when you need it. Enjoy this festive twist with stilton blue cheese and thyme to take your roast potatoes to the next level.

Ingredients

1 bag Green Isle Roast Potatoes

75g Stilton or any blue cheese, crumbled

80g butter

1 garlic clove, crushed

Pinch chilli flakes

6 sprigs of thyme, leaves removed and roughly chopped

Small handful flat leaf parsley, roughly chopped

Zest of ½ lemon

Sea salt

Freshly ground black pepper

Method:  

  1. Preheat oven to 200 C / 180 C fan. Place the Green Isle Roast Potatoes on a baking tray and cook for 25 - 30 minutes, until nicely browned.
  2. Remove from the tray and place in to an ovenproof serving dish. Rumble over the blue cheese and place back into the oven for 10 minutes to melt the cheese.
  3. Meanwhile, melt the butter in a small saucepan and add the garlic and chilli flakes. Cook for 2 minutes the stir through the thyme leaves, parsley and lemon zest. Season with salt and pepper.
  4. Remove the potatoes from the oven and spoon over the garlicky, herby butter. Serve to the table, remembering that the dish is hot!!
