Croquettes topped with spring onion and Garden Pea salsa

Made with the finest potatoes and rolled in fine golden breadcrumb coating, our Croquettes taste divine when served with this spring onion and Garden Pea salsa, ready in just 30 minutes. This recipe is the perfect dinner side to accompany your roasts!

Ingredients

1 bag Green Isle Potato Croquettes

100 grams Green Isle Frozen Peas

5 spring onions

3 ½ tablespoons olive oil

½ garlic clove, peeled and finely chopped

Juice of ½ lime

Sea salt and freshly ground black pepper

1 jalapeno chilli, sliced

Method:  

  1. Preheat the oven to 200 C / 180 C fan.
  2. Place the Green Isle Potato Croquettes on a baking tray and place into the oven for 15 - 20 minutes.
  3. Whilst the croquettes cook, place the peas into a pan of boiling, salted water and cook for 3 - 4 minutes then drain and place into a bowl of iced water to stop them cooking further. Drain again and set aside.
  4. To make the salsa, put a pan over a high heat. Once very hot, add the spring onions and 1 tablespoon olive oil along with a pinch of salt and cook for 5 minutes until charred and tender. Transfer to a board to cool, then chop finely. Add to a bowl with the remaining oil, garlic the lime juice and the cooled peas. Season to taste and set aside.
  5. When the croquettes are cooked, pile onto the plate and top with the salsa. Sprinkle over the sliced jalapenos to serve.
