This simple yet flavourful pasta dish is packed with goodness from Green Isle Garden Peas, which are picked at their peak and frozen to lock in their natural sweetness and nutrients. Combined with creamy burrata, fragrant basil, and a zing of lemon, it’s a delicious way to get 1 of your 5 a day. Ingredients:
- 160g pasta (mini macaroni or your favourite short pasta)
- 120g Green Isle Garden Peas
- 2 cloves garlic, finely chopped
- 2 shallots, finely chopped
- Zest of 1 lemon
- 70g parmesan, finely grated
- 1 burrata
- A handful of fresh basil leaves
- Olive oil, for drizzling
- Salt, to taste
Method:
- Cook pasta in boiling salted water until cooked.
- Add the garden peas for the last 4 minutes of boiling, strain the peas and pasta.
- Sauté the garlic and shallots, add them to the peas and pasta.
- Zest a lemon into the pasta, grate parmesan into the pasta.
- Serve with burrata and basil leaves and a drizzle of olive oil.
