Healthier Veggie Loaded Chips

If you are craving some tasty chips with a healthy twist, why not try our recipe for some healthy veggie loaded fries with our NEW Low Fat Oven Chips, ready in just 30 minutes. Healthy veggie loaded fries . Our new Low Fat Chips are made from just two ingredients potato & sunflower oil.

Ingredients

1 bag Green Isle Low Fat Chips

For the veggies:

½ red cabbage, thinly sliced

150 grams Green Isle Frozen Sweetcorn

1 cucumber, roughly chopped

2 avocados

2 limes

Handful of pumpkin seeds, toasted

Salt and freshly ground black pepper

For the dressing:

50 grams tahini

½ garlic clove, grated

Juice of ½ a lemon

Cold water

Method:  

  1. Cook the Green Isle Low Fat Chips according to the packet instructions.
  2. Make the dressing by mixing the tahini, garlic and lemon juice together with enough water to make a dressing that is the consistency of double cream. Set aside.
  3. Place the Green Isle Frozen Sweetcorn into boiling water and cook for 3 - 4 minutes until cooked through and tender. Drain and set aside.
  4. Mash the avocados with the juice of 1 lime, the chilli flakes and a good pinch of salt and pepper. When the chips are cooked, divide them between 4 shallow bowls, keeping them on one side of the bowl. Build the rest of the ingredients into the bowl in a clockwise direction, making sure to keep them all separate. Finally, sprinkle with the toasted pumpkin seeds and serve with the tahini dressing.
