Healthy ‘fish and chips’ with Low Fat Chips and Garden Peas
Enjoy a healthier twist on the classic fish and chips with our Low Fat Chips and our Garden Peas. This recipe uses Donegal Catch Cod fillets but any white fish works with this homemade pesto crumb.

Ingredients
4 white fish fillets, we used cod but any firm white fish will do
75 grams fresh breadcrumbs
3 tablespoons pesto
20 grams parmesan, finely grated
Zest of 1 lemon
Salt and freshly ground black pepper
1 bag Green Isle Low-Fat Chips
150 grams Green Isle Garden Peas
For the tartare sauce:
3 cornichons, chopped
½ shallot, finely chopped
1 tablespoon capers, roughly chopped
1 teaspoon fresh parsley, finely chopped
1 teaspoon fresh mint, finely chopped
1 teaspoon fresh dill, finely chopped
100 grams 0% Greek yogurt
Zest and juice of ½ lemon
Method:
- Mix all the ingredients for the tartare sauce together and set aside.
- Preheat the oven to 200 C / 180 C fan and cook the Green Isle Low-Fat chips according to the packet instructions.
- Place the fish fillets on a baking tray and set aside.
- Mix the breadcrumbs, pesto, parmesan, lemon zest and some salt and pepper together in a small bowl and divide between the fish fillets on the tray, pressing them down onto the fish lightly.
- Place the fish into the oven for the last 10 minutes of the cooking time.
- Finally, bring a pot of water to the boil and add the peas, cooking for 3 -4 minutes then serve with the fish, chips and tartare sauce.
