Lightly Spiced Gluten Free Wedges

Italian topped wedges

Match days are made better with Green Isle Lightly Spiced Wedges topped with Italian style ingredients, including mozzarella, basil pesto and cherry tomatoes. This recipe is vegetarian friendly and our Lightly Spiced Wedges are also gluten free which makes them a great crowd pleaser.


1 bag Green Isle Lightly spiced wedges

200 grams cherry tomatoes, halved

2 tbsps olive oil

1 garlic clove, finely sliced

150 grams mozzarella cheese, shredded

1 tub basil pesto

Handful of basil leaves, torn, to serve


Freshly ground black pepper


  1. Pre heat oven to 200C / 180 C fan. Lay wedges out on a large baking tray and place into the oven for 20 - 25 minutes, until golden and piping hot throughout.
  2. Whilst the wedges cook, place the cherry tomatoes and olive oil into a large frying pan and place over a high heat. Season and cook for 4 - 5 minutes until the tomatoes are warmed through and just starting to burst. Add the garlic and cook for 2 more minutes then remove from the heat.
  3. When the wedges have had 25 minutes, remove from the oven and scatter over the blistered cherry tomatoes. Add the mozzarella and place the tray back into the oven for 10 minutes to melt the cheese.
  4. To serve, drizzle the wedges with the pesto and scatter over the torn basil leaves.
