Lemon and Mixed Berry Cheesecake Bars with Crumble Topping

Ingredients
For the crust:
12 digestive biscuits, finely crushed
3 tablespoons caster sugar
75 ml unsalted butter, melted
¼ teaspoon salt
For the filling:
450 grams cream cheese
115 grams caster sugar
2 large eggs
1 teaspoon vanilla bean paste
1 teaspoon finely grated lemon zest
For the topping:
100 grams plain flour
2 tablespoons light brown sugar
2 tablespoons caster sugar
½ teaspoon ground cinnamon
¼ teaspoon salt
60 grams unsalted butter, melted
200 grams Green Isle frozen mixed berries
Method:
- Pre heat oven to 180 C / 160 C fan.
- Lightly oil a 23 cm x 23 cm baking tin and line with baking paper.
- In a medium bowl, combine the crushed digestive biscuits, sugar, melted butter and salt, mixing until the mixture resembles wet sand and holds together when pressed.
- Place the crust mixture into the prepared baking tin and press down firming into an even layer. Then place into the pre heated oven for about 12 minutes, until golden. Let cool on a wire rack for 10 minutes.
- Whilst the crust cools, beat the cream cheese, sugar, eggs, vanilla and lemon zest until smooth then set aside.
- For the topping, in a separate bowl, mix together the flour, sugars, cinnamon, and salt. Add the butter and mix until a crumbly dough forms.
- Add the filling to the baking tin, spreading it out over the crust to the edges, then sprinkle over the Green Isle Frozen Mixed Berries. Using your hands, crumble the topping evenly over the berries and filling.
- Bake until just set in the centre, about 30 minutes then let cool completely on a wire rack. Slice into squares and serve. Any leftovers should be stored in the fridge.
