Mexican Style Cauliflower Rice

Ingredients
2 packs Cauliflower Rice
1 tbsp rapeseed oil
2 onion, finely chopped
2 garlic cloves, minced
320g cauliflower rice
1 to 2 tsp chipotle paste,
1 x 400g tin chopped tomatoes
150g cherry tomatoes, halves
150g corn kernels
1 celery stalk, chopped
Cumin
Paprika
Coriander
Salt and pepper
Method:
- Start by heating up the oil in a large pan.
- Chop the onions and garlic and add to the pan for a couple of minutes.
- Add the chipotle paste and stir. Reduce the heat. Season to taste with salt and pepper and add the spices.
- Pour the canned tomatoes (with a splash of water to rinse the can).
- Cut the cherry tomatoes in halves and celery stalk and add to the pan.
- Finally add the corn kernels. Let it simmer.
- When cooked, add the cauliflower rice and coat well in the sauce. Serve immediately with some tortillas and enjoy.
