Cauliflower Rice

Mexican Style Cauliflower Rice

Using our Cauliflower Rice saves time and helps you avoid food waste with this super simple, Mexican style Cauliflower Rice by Claire Marie (@clairemariecuisine).


2 packs Cauliflower Rice

1 tbsp rapeseed oil
2 onion, finely chopped
2 garlic cloves, minced
320g cauliflower rice
1 to 2 tsp chipotle paste,
1 x 400g tin chopped tomatoes
150g cherry tomatoes, halves
150g corn kernels
1 celery stalk, chopped
Salt and pepper


  1. Start by heating up the oil in a large pan.
  2. Chop the onions and garlic and add to the pan for a couple of minutes.
  3. Add the chipotle paste and stir. Reduce the heat. Season to taste with salt and pepper and add the spices.
  4. Pour the canned tomatoes (with a splash of water to rinse the can).
  5. Cut the cherry tomatoes in halves and celery stalk and add to the pan.
  6. Finally add the corn kernels. Let it simmer.
  7. When cooked, add the cauliflower rice and coat well in the sauce. Serve immediately with some tortillas and enjoy.
