Ingredients
- 125ml Olive Oil
- 150g Coconut Sugar
- 3 tbsp Maple Syrup
- 1 Lemon, zested
- 350g Oats
- 115g Green Isle Frozen Mixed Berries
- Pinch of Sea Salt
Method:
- Preheat oven to 180°C (fan). Grease and line an 8-inch square baking tin.
- In a saucepan, gently simmer the olive oil, coconut sugar, maple syrup, and lemon zest until the sugar dissolves.
- Stir in the oats and a pinch of sea salt, mixing until fully coated.
- Transfer the mixture into the lined tin and flatten it down evenly with the back of a spoon.
- Sprinkle the Green Isle Frozen Mixed Berries on top and lightly press them into the surface.
- Bake for 30 minutes until golden brown at the edges.
- Allow to cool completely in the tin before lifting out and slicing into 9 squares.
