Mixed Berry Flapjacks

Ingredients

  • 125ml Olive Oil
  • 150g Coconut Sugar
  • 3 tbsp Maple Syrup
  • 1 Lemon, zested
  • 350g Oats
  • 115g Green Isle Frozen Mixed Berries
  • Pinch of Sea Salt

Method:  

  1. Preheat oven to 180°C (fan). Grease and line an 8-inch square baking tin.
  2. In a saucepan, gently simmer the olive oil, coconut sugar, maple syrup, and lemon zest until the sugar dissolves.
  3. Stir in the oats and a pinch of sea salt, mixing until fully coated.
  4. Transfer the mixture into the lined tin and flatten it down evenly with the back of a spoon.
  5. Sprinkle the Green Isle Frozen Mixed Berries on top and lightly press them into the surface.
  6. Bake for 30 minutes until golden brown at the edges.
  7. Allow to cool completely in the tin before lifting out and slicing into 9 squares.
