Shredded Piri Piri chicken and tropical salsa tacos

Salsa
225g Green Isle Tropical Smoothie Mix (defrosted)
1 red chilli
Juice of half a lime
1 tsp sugar
2 tbsp. chopped coriander or mint
Tacos
8 Tacos prepared as per pack
Half an iceberg lettuce shredded
4 chicken fillets
2tbsp piri piri seasoning
4 tbsp. Greek yogurt – optional.
Method:
- Chop the frozen tropical mix into small cubes. Thinly slice the chilli In a small bowl combine the Tropical smoothie, coriander, chilli, lime juice, sugar and set aside.
- Fry the chicken fillets on a grill pan sprinkled with the piri piri seasoning until cooked. With two forks shreds the cooked chicken.
- Assemble the tacos by dividing the lettuce, chicken and tropical salsa into each taco. Serve with Greek yogurt.
