Skinny Fries with a ‘Fakeaway’ Fish Finger Burger

Ingredients
- 300g Green Isle Skinny Fries (1 pack)
- 2 brioche buns
- 2 slices mild cheddar cheese
- 6 Donegal Catch Omega-3 Fish Fingers
- 2 tbsp tartare-style sauce (see below)
- Handful of shredded lettuce (optional)
For the tartare-style sauce:
- 2 tbsp light mayonnaise
- 1 tsp chopped capers
- ½ tsp lemon juice
Method:
- Air-fry the fish fingers at 180°C for 8–10 minutes until crispy and golden.
- Preheat the air fryer to 200°C and cook the Skinny Fries for 8 minutes, shaking halfway through for an even crisp.
- Lightly toast the brioche buns until just golden.
- Mix the mayonnaise, chopped capers, and lemon juice in a small bowl to make the tartare-style sauce.
- Layer three fish fingers onto each bun, then top with a slice of cheese, a spoonful of sauce, and shredded lettuce if using.
- Serve with the fries on the side and enjoy.
