Spicy Cauliflower Rice with halloumi
Enjoy this veggie packed recipe made with our Cauliflower Rice, Spinach and Garden Peas, with turmeric, ginger and garlicy rice, served with spicy halloumi skewers. A tasty way to help you reach your 5 a day!

Ingredients
120 grams halloumi, cut into cubes
1 tablespoon rapeseed oil
1 red onion, finely sliced
1 garlic clove, crushed
1 thumb-sized piece ginger, finely grated
1 teaspoon ground turmeric
1 teaspoon medium curry powder
100 grams Green Isle Frozen Spinach
100 grams Green Isle Frozen Peas
1 red chilli, thinly sliced
Handful of coriander, roughly chopped
Method:
- Thread the halloumi onto 4 small skewers and set aside.
- Heat the oil in a large frying pan and fry the onion over a medium heat for 10 minutes until softened. Add the garlic, ginger, turmeric and curry powder, and cook for 1 min more then stir through the cauliflower rice, spinach and peas and cook for a further 5 minutes to warm everything through, adding 1 tablespoon water if it looks a little dry. Season and stir through the chilli.
- For the halloumi skewers, heat a pan over a medium heat and add the halloumi, cooking on each side for about 1 minute until browned all over. Serve with the spicy rice, sprinkled with coriander.
