Traybake with Green Isle Ready Roasted Vegetables & Chicken Thighs
Take the stress out of midweek dinners with this easy traybake made with Green Isle Ready Roasted Vegetables and seasoned potato. Paired with marinated chicken thighs and air-fried to perfection, it’s a flavour-packed, fuss-free meal the whole family will love—just marinate, air fry, and serve!

Ingredients:
- 6 boneless chicken thighs
- 1 pack Green Isle Ready Roasted Vegetables with Lightly Seasoned Potato
- Fresh basil, chopped (for garnish)
For the Marinade:
- 3 tbsp olive oil
- 3 tbsp balsamic vinegar
- 2 tbsp soy sauce
- 1 tsp lemon juice
- 2 tbsp brown sugar
- 1 tsp dried rosemary
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and pepper to taste
Method:
- In a bowl, whisk together all marinade ingredients. Add the chicken thighs and coat well. Cover and marinate for at least 30 minutes, or overnight for best flavour.
- Preheat your air fryer to 200°C.
- Place the Green Isle Ready Roasted Vegetables into the air fryer basket or tray. Lay the marinated chicken thighs on top.
- Cook for 15 minutes, or until the chicken is fully cooked and golden, and the vegetables are heated through.
- Garnish with chopped fresh basil and serve.
