Traybake with Green Isle Ready Roasted Vegetables & Chicken Thighs

Take the stress out of midweek dinners with this easy traybake made with Green Isle Ready Roasted Vegetables and seasoned potato. Paired with marinated chicken thighs and air-fried to perfection, it’s a flavour-packed, fuss-free meal the whole family will love—just marinate, air fry, and serve!

Ingredients:

  • 6 boneless chicken thighs
  • 1 pack Green Isle Ready Roasted Vegetables with Lightly Seasoned Potato
  • Fresh basil, chopped (for garnish)

For the Marinade:

  • 3 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 2 tbsp soy sauce
  • 1 tsp lemon juice
  • 2 tbsp brown sugar
  • 1 tsp dried rosemary
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste

Method:  

  1. In a bowl, whisk together all marinade ingredients. Add the chicken thighs and coat well. Cover and marinate for at least 30 minutes, or overnight for best flavour.
  2. Preheat your air fryer to 200°C.
  3. Place the Green Isle Ready Roasted Vegetables into the air fryer basket or tray. Lay the marinated chicken thighs on top.
  4. Cook for 15 minutes, or until the chicken is fully cooked and golden, and the vegetables are heated through.
  5. Garnish with chopped fresh basil and serve.
