Veggie Irish Breakfast with Green Isle Hash Brown Bites

Ingredients
12 Green Isle Hash Brown Bites
4 Portobello Mushrooms
Unsalted butter
Thyme
4 vine tomatoes
1 garlic clove
200g baby spinach
6 x eggs
Chives
1 x 400g tin baked beans
Wholemeal bread, for toast
Ketchup, brown sauce, optional
Salt and freshly ground black pepper
Method:
- Preheat the oven to 200 C / 180 C.
- Place the hash brown bites on a tray and cook for 20 - 25 minutes until golden.
- Place the portobello mushrooms onto a separate tray and dot with 50 grams of the cubed butter. Season with salt and pepper and sprinkle over the fresh thyme. Place the tray into the oven for 15 minutes.
- Place a frying pan over a high heat and add the tomatoes, cut side down. Fry for 5 minutes until charred then place into the oven for 10 minutes.
- Place 25 grams butter in a saucepan and add the grated garlic. Cook for 1 minute then add the spinach and heat until wilted. Season well.
- In a separate pot add the remaining 25 grams butter and when melted, add the beaten eggs along with a good pinch of salt and pepper. Stir gently until scrambled to your liking.
- Serve the hash brown bites with the mushrooms, tomatoes, wilted spinach and scrambled eggs alongside some toast and sauce of your choice.
