Veggie Breakfast Roll with Green Isle Hash Brown Bites
Enjoy this veggie twist on one of Ireland’s favourites, the breakfast roll! Our NEW Hash Brown Bites a great addition to any breakfast roll.

Ingredients
1 bag Green Isle Hash Brown Bites
1 tablespoon olive oil
1 white onion, finely sliced
100 grams chestnut mushrooms, sliced
5 cherry tomatoes, chopped
4 x midi baguettes, sliced in half lengthways
Butter
Shredded cheese, to serve
Baked beans, to serve
Method:
- Preheat the oven to 200 C / 180 C. Place the hash brown bites on a tray and cook for 20 - 25 minutes until golden.
- Whilst the bites cook, heat a frying pan over a medium heat and add the olive oil. Add the onion and cook for 5 minutes then add the mushrooms and fry, trying not to stir too much, for 3 - 4 minutes. Add the cherry tomatoes and a knob of butter and cook for a further 3 minutes. Season well with salt and pepper and set aside.
- To serve, lightly toast and butter your midi baguettes then divide the onion and mushroom mix between the baguettes. Top with the hash brown bites and finish with a good handful of cheese.
- Serve alongside some baked beans for a fab, filling veggie breakfast.
