Warm Broccoli Salad
This delicious Warm Broccoli Salad is a hearty, flavour-packed dish that’s perfect for lunch or as a standout side. Made with Green Isle Broccoli Florets — picked at their peak and frozen at their freshest — you get all the nutrition of fresh veg without the prep or waste. High in protein and a source of vitamin C, our broccoli is the perfect base for this comforting salad, layered with crispy bacon, toasted pecans, cranberries, and a creamy, tangy dressing that brings it all together.

Ingredients:
- 450g Green Isle broccoli florets
- 250g bacon lardons
- ¼ cup panko breadcrumbs
- 2 tbsp olive oil
- 2 shallots, finely sliced
- ¼ cup chopped pecans
- ¼ cup dried cranberries
- ¼ cup grated parmesan
Dressing:
- ¾ cup Greek yoghurt
- ½ cup finely grated parmesan
- 3 tbsp olive oil
- 3 tbsp lemon juice
- 2 anchovies
- 1½ tsp Dijon mustard
- 1 garlic clove
Method:
- Coat broccoli in olive oil and air fry for 6 minutes
- Pan fry bacon and shallots, remove from pan
- Toast pecans in same pan for 3 minutes
- Add breadcrumbs to pan, toast until golden (3 minutes)
- Blend dressing ingredients until smooth
- Plate broccoli and top with toppings
- Drizzle dressing and toss to coat
