Warm Broccoli Salad

This delicious Warm Broccoli Salad is a hearty, flavour-packed dish that’s perfect for lunch or as a standout side. Made with Green Isle Broccoli Florets — picked at their peak and frozen at their freshest — you get all the nutrition of fresh veg without the prep or waste. High in protein and a source of vitamin C, our broccoli is the perfect base for this comforting salad, layered with crispy bacon, toasted pecans, cranberries, and a creamy, tangy dressing that brings it all together.

Ingredients:

  • 450g Green Isle broccoli florets
  • 250g bacon lardons
  • ¼ cup panko breadcrumbs
  • 2 tbsp olive oil
  • 2 shallots, finely sliced
  • ¼ cup chopped pecans
  • ¼ cup dried cranberries
  • ¼ cup grated parmesan

Dressing:

  • ¾ cup Greek yoghurt
  • ½ cup finely grated parmesan
  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • 2 anchovies
  • 1½ tsp Dijon mustard
  • 1 garlic clove

Method:  

  1. Coat broccoli in olive oil and air fry for 6 minutes
  2. Pan fry bacon and shallots, remove from pan
  3. Toast pecans in same pan for 3 minutes
  4. Add breadcrumbs to pan, toast until golden (3 minutes)
  5. Blend dressing ingredients until smooth
  6. Plate broccoli and top with toppings
  7. Drizzle dressing and toss to coat
