Cauliflower and egg fried rice with broccoli and peas
Enjoy a lighter variation of the classic egg fried rice using our Cauliflower Rice with some broccoli and peas, the ultimate veggie packed dish that doesn’t compromise on flavour with lots of fresh garlic, chilli and ginger. Ready in less than half an hour, this dish is perfect for midweek lunches or dinners.

Ingredients
4 portions of Green Isle Cauliflower Rice
200 grams Green Isle Frozen Peas
200 grams Green Isle Frozen Broccoli
2 tablespoons sesame oil
2 garlic cloves, minced
2 cm piece of ginger, grated
2 beaten eggs
3 tablespoons light soy sauce
6 spring onions, thinly sliced
½ teaspoon white pepper
Large handful of coriander, roughly chopped
For the sprinkle:
200 grams roasted peanuts, unsalted
3 tablespoons toasted sesame seeds
3 tablespoons sugar
1 teaspoon salt
Method:
- For the sprinkle, pulse peanuts in food processor or blender for 10 seconds. Add sugar, salt and toasted sesame seeds and pulse for another 5-6 seconds.
- Store unused portions in air-tight container.
- Cook peas and broccoli. Set aside.
- Scramble egg. Set aside. Cook garlic and ginger in sesame oil, add cauli rice then stir through egg, soy sauce, veg, coriander and spring onions. Serve with sprinkle on top.
