Ingredients:
- 1 x Bag Green Isle Country Vegetables
- 2 x Sweet potato, peeled and cubed
- 3 x Garlic cloves, chopped finely
- 1 x Leek
- 450ml x Vegetable or chicken stock
Method:
- Pan-fry the leek and garlic. Once cooked, add the sweet potato and cover with stock.
- Once the potato is almost soft, boil the Country Vegetables for 4-5 minutes.
- Strain the vegetables and add the potato and vegetable mix to a blender (add the stock also).
- Add cream if desired.
- Serve with a cheese toastie.
