Hidden Vegetable Sauce Pasta Bake

This works perfectly with any of our veggie range, why not try with our Mixed Vegetables, a tasty mix of carrots, corn and peas, pre-prepared saving you time and helping you avoid food waste. The perfect midweek meal for the whole family to enjoy.

Ingredients

250 grams pasta

200 grams Green Isle Mixed Vegetables (or any of our veggie range)

400 ml passata with garlic

1 tablespoon balsamic vinegar

Handful of basil leaves

150 grams cheddar/mozzarella mix

To serve

Green salad

Method:  

  1. Preheat the oven to 200 C / 180 C fan.
  2. Cook the pasta for 3 minutes less than the packet instructions state then drain and set aside.
  3. For the sauce, steam the Green Isle Mix Vegetables according to the packet instructions then remove ¼ of the vegetables and place into a small bowl. Place the remaining ¾ place into a high speed blender along with the passata, balsamic vinegar, basil leaves and some salt and pepper. Blitz until a smooth-ish sauce forms.
  4. Place the sauce into a bowl and add the pasta, stirring through to combine then add the reserved vegetables and half of the cheese mix. Place into an ovenproof dish and sprinkle with the remaining cheese mix.
  5. Bake in the preheated oven for 20 minutes or until the cheese is golden and bubbling then serve straight away with a fresh, green salad.
