Miso Salmon with Cauliflower Rice & Vegetables

Ingredients
4 salmon fillets
2 garlic cloves, finely grated
20 grams fresh ginger, finely grated
40 grams butter, melted
1 tablespoon honey
2 tablespoons white miso paste
2 packets Green Isle cauliflower rice
100 grams Green Isle frozen broccoli & spinach
2 spring onions, finely sliced, to serve
Coriander leaves, to serve
Method:
- Preheat the oven to 200 C / 180 C fan.
- Add the garlic, ginger, butter, honey, miso paste and a good amount of black pepper to a bowl and stir to combine.
- Remove 4 tablespoons of the marinade and set aside. Place the salmon fillets into the main bowl and turn them in the marinade then place onto a lined baking sheet. Pour over any marinade remaining in the bowl and cook for 10 – 12 minutes until cooked to your liking.
- While the salmon is cooking, cook the Green Isle cauliflower rice according to the packet instructions and boil or steam the broccoli.
- Once the salmon is done, serve with the cauliflower rice, steamed broccoli and reserved marinade poured over. Garnish with spring onions and coriander leaves.
