Miso Salmon with Cauliflower Rice & Vegetables

Ingredients

4 salmon fillets
2 garlic cloves, finely grated
20 grams fresh ginger, finely grated
40 grams butter, melted
1 tablespoon honey
2 tablespoons white miso paste
2 packets Green Isle cauliflower rice
100 grams Green Isle frozen broccoli & spinach
2 spring onions, finely sliced, to serve
Coriander leaves, to serve

Method:  

  1. Preheat the oven to 200 C / 180 C fan.
  2. Add the garlic, ginger, butter, honey, miso paste and a good amount of black pepper to a bowl and stir to combine.
  3. Remove 4 tablespoons of the marinade and set aside. Place the salmon fillets into the main bowl and turn them in the marinade then place onto a lined baking sheet. Pour over any marinade remaining in the bowl and cook for 10 – 12 minutes until cooked to your liking.
  4. While the salmon is cooking, cook the Green Isle cauliflower rice according to the packet instructions and boil or steam the broccoli.
  5. Once the salmon is done, serve with the cauliflower rice, steamed broccoli and reserved marinade poured over. Garnish with spring onions and coriander leaves.
