Green Isle Super Green Soup

Warm up this winter with our super green soup, consisting of Garden Peas, Broccoli and Spinach. A tasty way for you get lots of the vitamins and minerals we all need during the winter time. Ready in less than 30 minutes, this soup is perfect for family midweek meals and easy to reheat for lunch or dinner the following day.

1 tablespoon olive oil

1 onion, finely diced

2 garlic cloves, finely chopped

1 large potato, chopped into 1 cm cubes

1 ltr vegetable stock

150 grams Green Isle frozen Peas

100 grams Green Isle Broccoli

75 grams Green Isle Spinach

Zest of ½ a lemon

 

 

To serve (optional):

Natural yoghurt (or make vegan with coconut yogurt)

Dill leaves

Method:  

  1. Place the olive oil and chopped onion into a large saucepan and cook, over a medium heat, until the onion is softened and translucent - about 10 minutes. Add the chopped garlic and cook for 2 minutes then add the chopped potato and vegetable stock. Bring to a boil and then turn down to a simmer. Cook for 15 minutes until the potato is tender.
  2. Add the Green Isle peas, broccoli and spinach and cook for a further 10 minutes - until the vegetables are tender. Remove the pot from the heat and blend with a hand blender until smooth then return to the heat and bring back to the boil. Season with salt and pepper then stir through the lemon zest and serve immediately with some yoghurt and dill leaves.
